Turmeric processing

India accounts for about 80 % of world turmeric production and 60 % of world exports. Traditional turmeric processing involves farm level processing and plant level processing, presented in flow sheet . The steps in farm level processing are labor intensive, time consuming, and may affect on curcumin content of the turmeric. The farm level processing involves harvesting, cleaning, curing and drying; these processes improve the shelf life of turmeric and reduce its transportation weight. The curing process involves cooking of cleaned rhizomes at 100° C. Steaming of turmeric at 100° C sometime results in overcooking thus lowering the curcumin content of turmeric. The cooked rhizomes typically take about 15-25 days (depends on ambient conditions) to dry in the sun. The sun drying process includes drudgery like rolling the rhizomes each day to improve their shape and management rhizomes on daily basis (spread during sunny hours and heap during non-sunny hours).

The plant level processing involves polishing, grinding and packing. Polishing of dried rhizomes removes their hard skin. The polished rhizomes are then crushed and sieved to produce turmeric powder. The powder is packed in small packets for supplying to market.

Our solution is a credible option for turmeric farmers to produce turmeric powder from raw turmeric rhizomes in 2 days. The RETP plant machinery mainly consists of a boiler, slicer, vacuum cooker, hot air dryer and pulveriser. The RETP plant not only reduce drudgery (physical work) for farmer but also reduces cost of turmeric processing. The plant has scientific design and operation facilitates production of hygienic and consistent quality produce.
